High Five for Friday

Why does it seem like 4 day work weeks go by even slower than 5 day ones? I don’t get it. I am exhausted and so happy it’s Friday!

Last Friday I had a friend date with LeeAnn. We are both have young boys and have been friends for a long time. It was nice to spend some quality time with her. Our nights out sure have changed, but that just means we have to savor what little time we do get together. Oh and drink Mt. Dew with our wine so we stay awake!!!

On Saturday morning Chad went fishing so it was just my sweet boy and I all day. He loves going to the grocery store and getting  fresh doughnuts for breakfast. I hate doughnuts, but luckily Schnucks makes a mean Asiago cheese bagel. I love watching Trace eat a doughnut. He dives in and his whole face ends up so sticky. I love it!

I cleaned out Trace’s closet over the weekend. He got his hands on his Halloween costume. It was pretty funny to see him walking around dressed as The Hulk. He loved it.

I have been majorly dragging all week. I think I’m fighting off a cold or something. Anyway, sometimes you just need Pepsi and Cheetos to get you through the day. It sure helped me.

This week I became obsessed with these little gems. White chocolate chip hard shell filled with melty white chocolate. Dream. Come. True. They sell them at JoAnn’s Fabrics and I had to stop in there the other day to get some fabric and grabbed one. Luckily I had to go back in to return a canvas so I got this little treat twice this week!

Eggplant Parmesan Panini {{ or Grilled Cheese }}

Eggplant Parmesan is one of my all time favorite dishes. I went on a bit of a kick with it in 2010. At first Chad loved it, but he got so burnt out that I haven't gotten him to eat it in years! A couple weeks ago Chad and Trace were unexpectedly gone for the evening and I was on my own for dinner. As soon as Chad told me they weren't going to be home I started racking my brain trying to figure out what to make for dinner on my nice relaxing night alone. Eggplant Parmesan it was! I just didn't want to go through the hassle of making such a big dish that only I would eat. Then I decided to try making an eggplant Parmesan panini. This was so freaking good. I plan on making this for dinner any night that Chad is going to be out. 

What you need:
1 bun (I used an onion poppy seed bun for this one)
1 teaspoon of margarine
2 slices of fresh mozzarella
4 slices of fried eggplant (I breaded mine in breadcrumbs and fried in olive oil until crispy and browned)
3 tablespoons of red pasta sauce (I used caramelized onion with roasted garlic)
1 tablespoon of shredded provel (or mozzarella)

Step 1) Preheat skillet or panini press. Spread butter on parts of bun you want toasted.

Step 2) If making a panini lay bottom bun down and sprinkle with shredded provel (or mozzarella). Top with eggplant slices then red sauce and then the sliced fresh mozzarella. 
If making a grilled cheese you will want to sprinkle bottom bun with shredded provel (or mozzarella) and top with eggplant slices. Then lay the top bun down on the skillet separately and top with the sliced mozzarella.

Step 3) If making a panini top with top bun and cook until crispy. About 7 minutes for this one on my panini press. If making a grilled cheese this sandwich will be way too thick to flip like a normal grilled cheese so you will want to cook open faced and then combine before serving.

Step 4) Enjoy!!

High Five for Friday

Who’s ready for a three day weekend? This girl sure is!!!!! I have no major plans for this weekend. I’d like to knock out a few small things on my to do list, but the majority of the time I’m hoping to be outside with Trace. I’m also hoping to sneak in a nap at sometime. I love naps, but they are a rare thing for me! Here are the highlights from this past week.

We had Chad’s annual family fish fry. The weather was perfect and the food was even better. It’s nice to spend some time with friends and family we don’t get to see often!

For Christmas Trace got a butterfly habitat from my parents. You order the caterpillars from the company’s website, they’re shipped live and you basically grow a butterfly. Well this week we had 3 of the butterflies leave their cocoon. I’ll do a more detailed post about this later, but for now here is a picture of one of the butterflies. I haven’t had a chance to clear of my good camera’s memory card this week so I had to take a picture of the camera display with my iPhone.

I always try to make it a priority to have one on one time with Trace. Wednesday night Chad wasn’t home for bedtime so Trace and I had that routine to ourselves. We got some snuggles in before bed! I sure do love this little guy.

I joined a gym back in October and got really good about going after the New Year. I kind of fell off my routine for a couple weeks because I had lots of errands to run on my lunch hour. The only time I can make it to the gym is on lunch so if I have errands to run the workout just doesn’t happen. This week I had zero excuses and really made it a priority. I had 500 calorie workouts on Monday, Tuesday and Thursday. Wednesday I did a 600 calorie workout and it felt great. Note to self- Never forget a ponytail holder again. I hate working out with my hair in my face!!

Last weekend Trace and I were alone for Saturday morning. Chad was getting ready for the fish fry. I snapped this little gem of him. I think 2 and a half is such a fun age even though it can be trying at times!!!

My Bridal Shower

Let’s take a little trip shall we? Way back in June of 2013 my bridal shower was held. My sweet sister-in-law, Jacque, hosted the event. I first met Jacque in 2009. At the time she lived close by, but we didn’t see each other much. Flash forward to 2011. We were both pregnant at the same time and texted maybe a couple times a week. Now we are bffs and text constantly. Every. Single. Day. It turned out that Jacque and I are pretty much the same person with the exception of her love of Coke and my love of Pepsi. 

Here we are last weekend! 

Anyway, back to the shower….. She planned it all the way from Wisconsin! And it was everything I could have dreamed of.

Jacque created little recipe cards of the dishes that were served to give to each guest. Such a cute and thoughtful touch!!

Are you on cuteness overload yet? Well you will be.... there was a real live bird at the shower! Jacque's dad raises them and she thought this would be a cute touch. I loved it!

 Almost a year later and pictures of this cake still make me swoon. So pretty!

 My shower fell on my cousins Hannah's birthday. I surprised her with a brownie and candle and we all sang happy birthday to her. It's obvious how thrilled she was with this.

 Couple things here... 1) I'm an ugly crier. 2) My mother is a liar. She gifted me a handkerchief to use as my "something old" and said that it originally belonged to my great grandmother. Turns out she bought it at a thrift store and only claimed it was from my great grandma because it had a small stain on it. Who wants to own something with a stain unless it's a family heirloom? That's why she lied. Well I cried like the emotional bride to be I was. And then went home and scrubbed the stain so much it created a hole. I was sick about it! It finally came out that she was a liar later and made for a pretty funny story!
