Steak and White Cheddar Panini

Hey all! I made this super easy sandwich the other day for dinner and it was a hit in my book. I used to always order the steak and white cheddar panini from St. Louis Bread Co, but they recently discontinued it. I knew there had to be a way to easily duplicate it and I was right. Here it is....

Lunch meat roast beef (I like to use Oscar Mayer Carving Board Roast Beef)
1/8 of a cup shredded white cheddar cheese
1 teaspoon mayo
1/8 of a cup caramelized onions
1 ciabatta roll
Olive oil, for brushing bread

Note: I also sprinkled a bit of cajun spice on the meat for added flavor.

This sandwich can also be made in a skillet like a grilled cheese!

Total cook time (including preheating the press)- 10 minutes

1) To caramelized an onion you slice thinly (or small dice) a yellow onion. Cook it in 1 tablespoon of butter, stirring and scrapping the pan often, until the onion has a nice brown color.

2) Preheat panini press. 

3) Brush the outside of the bottom of the ciabatta roll with olive oil. Place on preheated panini press. Top with 1/2 of the shredded cheddar, beef, caramelized onion top with remaining cheese.Place top of ciabatta roll on the top and brush the top with olive oil. Note: Look for this roast beef... It's the bomb!

4) Close the panini press and cook for 5 minutes or so. Until bread is crispy and has grill marks and the cheese is melted.

5) Remove from panini press and gently pull bread apart. Add your mayo.

6) Enjoy!
