Blueberry Cheesecake Cookies

These cookies are super easy to make and taste like you put a ton of effort into them. I love to bring these to family functions and they are always eaten immediately! 



Ingredients:
2 boxes Jiffy blueberry muffin mix
4 oz cream cheese, softened
1 stick butter (or 1/2 cup margarine)
1/2 cup packed brown sugar
2 eggs
1 1/2 cups white chocolate chips

Step 1) Cream together butter, cream cheese and brown sugar. After combined, add one egg at a time, giving time for the egg to completely mix in before adding the second egg.

Step 2) Beat in muffin mix and mix well.

Step 3) Fold in chocolate chips


Step 4) Cover and refrigerate at least one hour.

Step 5) Preheat oven to 325.

Step 6) Drop rounded tablespoons full onto greased cookie sheet (or cookie sheet covered in parchment paper). Leave at least two inches between each tablespoon of dough.

Step 7) Bake 14-16 minutes. Be careful because the bottom burns easily!! Cool on racks.

Step 8) Try not to eat 6 (or more) cookies in one sitting. It'll be tough, but try!
