Chicken Caesar Panini


Chicken Caesar Panini



I recently purchased a panini press and am loving it a crazy amount. This sandwich was a quick and easy weeknight dinner for us. It tasted just like a chicken Caesar salad, but on crispy bread. It will definately be made again! 

406 calories per sandwich based on using white sandwich bread.

Prep time- 6 minutes (including panini press preheat)
Cooking time- 6 minutes
Total time- 12 minutes

Serving size- 1 sandwich

Ingredients: 
2 slices bread (I used a ciabatta roll)
1 teaspoon olive oil
1/8 cup chopped cooked chicken
1- 1 1/2 tablespoon Caesar dressing
1/8 cup your choice shredded cheese, dividied (I used half shredded cheddar and half shredded provel)
2-3 tomato slices
shredded or chopped lettuce 

Step 1) Preheat panini press. If you do not have a panini press you can use a regular skillet, but your sandwich will not have the grill marks a panini press leaves.

Step 2) Brush one side of each slice of bread or bun with olive oil

Step 3) Lay one slice of bread or bun olive oil side down on hot panini press (or skillet). Layer half of the shredded cheese, chicken and remainder of the cheese. (Please excuse overexposure here. I had a toddler hanging on my leg!)















                   Step 4) Cook until bread is brown and crispy, about 6 minutes.





Step 5) Remove from heat and gently pull apart bread. Then add your tomato and lettuce on top of one slice. Cover with Caesar dressing.





This was my first recipe post in a very long time! Note to self.... Next time plan my recipe post cooking for when Chad is home.
