S Makes Spinach Manicotti

First she squeezed the spinach dry. 

Then she mixed the ricotta cheese, spinach, Parmesan, mozzarella and cheddar cheeses together. 

Then she used the manicotti noodle as a telescope. 

Then S filled the manicotti noodles with our spinach and cheese mixture. Layed them in the baking dish covered in a red cream sauce. Then she sprinkled them with more cheese!

Looks good S!!!!!!! 

Spinach Manicotti
What you need:
1 small box frozen spinach (thawed and wrung dry)
12 uncooked manicotti noodles
15 oz or ricotta cheese
1 cup mozzarella (shredded)
1 cup cheddar (shredded)
2 eggs
1/4 cup Parmesan cheese
2 tablespoons Parmesan cheese
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
1/8 teaspoon salt
1/8 teaspoon pepper
3 cups prepared sauce

Step 1) Par-boil manicotti noodles, drain. Place in a bowl of cold water to prevent sticking. Preheat oven to 350.
Step 2) Combine eggs, 1/4 cup of Parmesan, 1/2 of the mozzarella, cheddar and ricotta cheeses and the seasonings. Drain shells, pat dry with paper towels. Fill shells with the cheese mixture. I put all of the filling in a plastic ziplock bag and cut one bottom corner of the bag off. That way you can pipe the filling in the shell easily. 
Step 3) Spread 1/2 cup of the prepared sauce over the bottom of a shallow 3 quart baking dish. Arrange shells over the sauce; covering with remaining sauce and spoon remaining ricotta over each shell. Sprinkle with remaining cheeses. Bake covered loosely with foil for 40 minutes.
