What you need:
42 Oreo cookies (30 whole and 12 chopped)
2 pounds cream cheese, at room temperature
1 cup sugar
1 teaspoon vanilla
4 large eggs, at room temperature and lightly beaten
1 cup sour cream
pinch of salt
Step 1) Preheat oven to 275. Place cupcake liners into cupcake trays. And then place a whole oreo cookie in each liner. You will need 30.
Step 2) Beat cream cheese until smooth. Gradually add the sugar. Combine well. Beat in vanilla.
Step 3) Slowly drizzle in the eggs.
Step 4) Beat in sour cream and salt.
Step 5) Stir in the chopped cookies. Pour batter into prepared liners. Fill close to the top because these will not rise.
Step 6) Bake 22 minutes rotating in oven if necessary. Cool on wire rack and then transfer to refrigerator for at least 4 hours.
