Tomatillo and Ancho Chili Salsa

What you need:
1 tablespoon olive oil
8 tomatillos, husk removed
1/2 white onion (do not chop!)
2 unpeeled garlic cloves
4 ancho chili peppers in adobo sauce
2 tablespoons chopped cilantro
water to thin if necessary

Heat oil over medium high heat. Add tomatillos, onion and garlic. Cook about 7 minutes or until tomatillos are browned. Peel garlic cloves. Blend garlic, tomatillos, ancho chili peppers and onion. Add cilantro and if too thick add water. Blend again. Add salt and pepper to taste. Blend once more.
