Slow Cooker Chicken Stroganoff

What you need:
2 lbs chicken breast halves
1 cup chopped onion
2 -10.75 ounce cans cream of chicken soup
1/3 cup water
12 ounces egg noodles
8 ounce sour cream

1) Cut chicken into one inch pieces. Combine chicken and onions. Stir soup and water then pour over chicken and onion.
2) Cover and cook on low 6-7 hours or 3-3.5 on high.
3) Cook noodles. Before serving stir in sour cream with chicken mixture. Serve over noodles.

Chicken Chili Cups

What you need:
1 cup shredded cheddar cheese
2 cups finely chopped chicken
1 cup ranch dressing
3 tablespoons chili powder
wonton wrappers

Mix all ingredients. Put wontons wrappers in mini muffin pan. Fill cups about half full. Spray the cups with cooking spray after filled to help make ends crispy. Bake 350 for 8-10 minutes.

Crab Stuffed Orange Roughy

What you need:
3 large fillets of fish. Small works too, but its not nearly as easy.
2 tablespoons melted butter
1 lemon

For stuffing:
2 tablespoons melted butter
1/4 red bell pepper, chopped
2 garlic cloves, minced
2 tablespoons flour
1/4 cup white wine
1/4 cup milk
6 oz crab meat, imitation is fine, chopped
1/4 cup breadcrumbs
1 tablespoon parsley
1 lightly beaten egg
2 ounces Parmesan cheese

1) Preheat oven to 375. Grease baking dish with melted butter.
2)Saute garlic and bell pepper in butter until tender. Blend in flour. Add wine and milk. Stir until thick. Remove from heat and add rest of ingredients. Combine well.

3) Using a fillet knife slice fish down the middle lengthwise. Fold back. Stuff fish with mixture. Fold flap of fish back over. The top of the fish isn't going to completely cover mixture.
4) Bake covered for 25 minutes.
This is one of my favorite dishes to make. Its fairly simple, but tastes amazing and looks very elegant.

Tomatillo and Ancho Chili Salsa

What you need:
1 tablespoon olive oil
8 tomatillos, husk removed
1/2 white onion (do not chop!)
2 unpeeled garlic cloves
4 ancho chili peppers in adobo sauce
2 tablespoons chopped cilantro
water to thin if necessary

Heat oil over medium high heat. Add tomatillos, onion and garlic. Cook about 7 minutes or until tomatillos are browned. Peel garlic cloves. Blend garlic, tomatillos, ancho chili peppers and onion. Add cilantro and if too thick add water. Blend again. Add salt and pepper to taste. Blend once more.

2010 in Review

2010 was a very fun year for the most part.
We celebrated Mardi Gras in Soulard.
I celebrated St. Patty's Day with some girlfriends.
Had to say good-bye to my camera on St. Patty's Day.
Chad and I adopted our kitty in March and drove her crazy the whole year.
I discovered that I could bake and decorate cakes pretty well. This is my first cake!!!
We spent Memorial Day in the Ozarks.

I got to throw my mom a very fun bachlorette party!
We celebrated my parent's wedding on their boat!
We spent time with my family celebrating the wedding.
I was lucky enough to get to spend lots of quality time with S.
I discovered that I enjoy glass etching.
I got to do lots of fun things with my girlfriends.
I ran a 5k with my brother.
I played in my first bocce ball tournament with my great friend Dawn.

Chad and I went to lots of Cardinals baseball games, Blues hockey games and even a Rams football game.
Chad discovered his love of fishing and spent lots of his weekends on fishing trips. Therefor I had lots of weekends that I got to spend watching chick flicks and eating Taco Bell.
We had a mini vacation in the country thus discovering that I am and indoor girl.
Chad and I had lots of fun new experiences in 2010, but the one truly awful thing of that year was having to say good-bye to Chad's brother. Craig passed away in October as the result of a horrible car accident. He will be missed forever.
We love and miss you!!

So here's to 2011. Let's make this year a good one!
