I Heart Etching

Thanks to Pam at Relatively Reagan I am currently obsessed with glass etching. Etching is actually pretty easy to do! I got most of the glass I used from Old Time Pottery for under $3 an item. The rest was just stuff I had around the house.

Forever in Our Hearts

Chad's brother Craig passed away Sunday evening as the result of a horrible accident. There are no words to describe how greatly he will be missed. Craig was always such a joy to be around. Always had a smart ass, funny comment that was guaranteed to make you giggle. Always playing tricks on the people he loved. I only had the pleasure of knowing Craig for a couple years, but I do know that 50+ years of knowing him would never have been long enough. I have so many great memories of Craig, but I'm only going to share my top three.
1) The look on his face and the sound of his laugh while I was opening my birthday gift a couple months ago. He bought me a bottle of Bean-O, some Astroglide, and a 3 pack EPT pregnancy test. He was just cracking himself up over his funny idea!!!!!!!
2) About a year ago some of Chad's family and I were hanging out around a fire in the backyard. I stood up to reach for something and started to sit right back down. I didn't realize that Craig had pulled my chair out from under me and I sat down pretty hard on the ground. Craig kept teasing me because he said I held the sitting position during my whole fall. That story can always make me smile.
3) Craig knew how much I liked to cook and always asked me advice on what brands to buy. He was trying so hard to make a nice home for him and his amazing daughter (who we will call R) and was constantly buying new household items to get ready for the day when they would move into their own house. It made me feel special that he thought highly enough of me to ask for my advice on things like that.


There is going to forever be a great void where Craig was supposed to be. He will be forever in our hearts. We love you Craig and miss you more than you ever could have imagined.

Furbert's Last Day With Us

Chad and I had to give up our newest cat, Furbert. We took her in because a former co worker's new baby was allergic to cats. At first Furbert hid the majority of the time. Once she started coming around us more, she started having little accidents on the floor. The accidents became more frequent, usually while we were asleep. We finally had to keep her confined to the bathroom for the evenings. We'd keep her locked up during the night for a week and then let her out. After that week she'd be fine for a week or so... no accidents. Then she would start up again. At one time we had 5 litter boxes in our 2 bedroom townhouse. This continued for almost 4 months. She finally started having accidents at all times except when she was confined to the bathroom. The only time she was completely accident free during her last month here was when Aldo was sick and confined to the bathroom. I really wish things could have worked out with Furbert. I still miss her everyday!

Parmesan Crusted Chicken

What you need: 
2 pounds chicken breast
1 cup ranch dressing (I used light and couldn't taste a difference
1 cup grated parmesean
2 garlic cloves, minced
1 cup shredded provolone, separated (Couldn't find it so just bought sliced and shredded myself)
panko bread crumbs

Step 1) I marinated my chicken overnight in lots of minced garlic, melted butter and olive oil. The butter gets hard on the chicken, but will just cook off.
Step 2) Cook the chicken to your personal preference. I baked mine. While chicken is cooking mix ranch, parmesean, garlic and 1/4 cup provolone.
Step 3) Toast breadcrumbs over dry heat on medium until they brown. They brown easily so watch carefully!
Step 4) After chicken is cooked, turn broiler on. Place cheese mixture on chicken. Sprinkle with remaining provolone. Top with breadcrumbs. Broil until cheese begins to brown.
This is my new favorite meal!!!!!!

A Few Fall Desserts

Pumpkin trifle
What you need:
1 package (14-1/2 ounces) spice cake mix
1 1/4 cups water
1 egg
4 cups milk
1 large box vanilla pudding
1 large box butterscotch pudding
1 can (15 oz) solid-pack pumpkin
1 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1 (12 oz) carton frozen whipped topping, thawed

Step 1) Combine cake mix, water and egg on low speed for 30 seconds. Beat on medium speed for 2 minutes. Pour into an ungreased 8-in square baking pan and bake at 350 for 35-40 minutes or until toothpick insearted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack. When completely cooled, crumble the cake. Set aside 1/4 cup crumbs for a garnish.

Step 2) Whisk milk and pudding mixes for 2 minutes or until slightly thickened. Let stand for 2 minutes or until soft-set. Stir in pumpkin and spices until well blended.

Step 3) In a trifle bowl or 3.5 quart glass serving bowl, layer a fourth of the cake crumbs, half of the pumpkin mixture, a fourth of the cake crumbs and half of the whipped topping. Repeat layers. Garnish with reserved cake crumbs. Serve immediately or refrigerate until serving.
                           Milk chocolate cake balls with melted chocolate drizzled on top. Delish!

Italian Fest in Pictures!!!!

 My home town hosts the Italian Fest every September. Its held on our Main St. and begins at 11:00 Friday morning and ends Saturday evening. I look forward to the Italian Fest like most people look forward to Christmas.
