Ranch-Style Chicken Casserole


What you need:
1 envelope onion recipe soup mix (I couldn't find this! So I bought a pouch of French Onion Soup mix in the soup isle.)
1 1/2 cups buttermilk
1 tablespoon flour
2 cloves finely chopped garlic
1 lb chicken breasts
2 cups frozen mixed veggies (I used a mix of broccoli, squash, onion, yellow bell peppers and carrots)
1/2 cup breadcrumbs
2 tablespoons melted butter
Paprika

Step 1) Preheat oven to 350. Combine soup mix, buttermilk, flour, and garlic. Set aside.
Step 2) Lightly grease 2 quart dish. Arrange chicken in dish. Arrange veggies around chicken. Add soup/buttermilk mix. Bake, covered, 20 minutes. Remove cover and top w/ breadcrumbs mixed with butter. Bake uncovered another 25 minutes. Sprinkle with paprika.
