What you need:
1/2 cup butter
1 1/4 cup sugar
1 cup buttermilk at room temperature
1 teaspoon vanilla extract
1 3/4 cup flour
3/4 cup cocoa powder
1 1/2 teaspoon baking soda
1/2 teaspoon baking powder
pinch of salt
8 oz cream cheese at room temperature
1 stick of butter at room temperature
1 1/3 cup powdered sugar
1/2 cup canned pumpkin
1/2 teaspoon ground cinnamon
big pinch of salt
Step 1) Preheat oven to 400 degrees. Beat butter and sugar until light and fluffy. Add egg. Then add buttermilk. Then add vanilla extract.
Step 2) In a separate bowl whisk together flour, cocoa powder, baking soda, baking powder and salt.
Step 3) In increments add dry ingredients to wet. Mix until just combined.
Step 4) Drop heaping tablespoons on parchment lined baking sheets. Leave 2 inches between each drop. Bake 8 minutes. Cool on wire racks.
To make filling) Beat cream cheese and butter until mixed thoroughly. Slowly add powdered sugar. Once smooth add cinnamon, salt and pumpkin.
