Step 1) Remove seeds from the pumpkin.
Step 3) Pat dry or let air dry overnight.
Step 4) Spray the cook sheet with cooking spray. Coat liberally with your choice of spice. I used cayenne pepper, chili powder, kosher salt, paprika, and ancho chili spice. I also drizzled with a tiny bit of olive oil.
Step 5) Bake at 300 for 45-55 minutes or until seeds become crunchy.
